Microscopic characterization of starches from tubers, legumes, and cereals from the Andean region of Ecuador

This study analyzed the microscopic characteristics of starch granules from tubers, legumes, and cereals of the Andean Region of Ecuador. The methodology included starch extraction and subsequent observation using bright-field optical microscopy to detail their morphology and structure. The analysis of seven tuber species, six legumes, and six cereals revealed great morphometric diversity. Tubers exhibited shapes ranging from spherical to extremely elongated, with sizes between 25.08 ± 11.63 μm (Arracacia xanthorrhiza) and 178.78 ± 35.84 μm (Solanum tuberosum). Among legumes, Phaseolus vulgaris showed the largest granules (95.44 ± 14.52 μm) with a central, fissured hilum, while Cicer arietinum and Lens culinaris presented elongated granules with a linear and punctate central hilum, respectively. Among the cereals and pseudocereals, the smallest granules were identified in Amaranthus caudatus (4.18 ± 1.88 μm) and Chenopodium quinoa (35.83 ± 16.92 μm). This research contributes to the knowledge of Andean plant genetic resources by providing cytological descriptors for starch identification. Furthermore, the study of these morphological characteristics lays the groundwork for biotechnological applications, the revaluation of ancestral crops, and the development of innovative and sustainable products.
