Abstract

The following research was conducted at Simón Bolívar University and Francisco de Paula Santander University, both located in the city of San José de Cúcuta (Colombia), with the purpose of analyzing the influence of gastronomy on the construction of youth identity. Based on an interpretative paradigm and a qualitative approach, various establishments frequently visited by students were analyzed. These establishments represent gastronomic spaces that allow for recognition, whether through the service provided, the food consumed, or the interactions that take place.

According to the information gathered through techniques such as semi-structured interviews and focus groups, students shared their experiences and perspectives, which provided insights into the diverse individual and collective identities constructed within these spaces. It is noteworthy that gastronomy plays a very important role in the construction of youth identity, as visiting different establishments weaves a relationship between space, gastronomy, and identity. Among the findings, students emphasized that youth-oriented spaces foster the creation and strengthening of emotional bonds, which in turn establish close ties with the space and all that it encompasses.
